KIMCHI CARBONARA UDON

Love the best of both worlds? How about a combination of both into a single dish? Honestly, I love dishes like this the best. A little bit of everything. But, you have to be careful though. We don’t want a fusion confusion here!

Worry not. This recipe definitely isn’t a fusion confusion, haha. This dish encompasses multiple culture and cuisines into one: Korean kimchi, Japanese udon noodles and yet also the Italian Carbonara. Try it out and share how it goes!

Make the perfect sunny side up and drizzle the yolk all over your udon for some oozy goodness. Let the yolk coat your udon and enjoy the combination of mellowed flavors in one mouthful.

KIMCHI CARBONARA UDON

Simple yet delicious meal that you can easily whip up in no time.

INSTRUCTIONS

Fried Chicken

  1. Heat up the oil in a pan at medium heat and add in the bacon once hot. Cook for 2-3 minutes (stir occasionally).

  2. Add onion, garlic, and kimchi until cooked (around 2-3 minutes).

  3. Add in the sauce mixture and mix well.

  4. Add udon noodles and mix well until fully coated with the sauce.

  5. Add the spring onions and egg, and mix well.
    Note: Beat the egg up before pouring it into the pan.

  6. Serve in a bowl and top with a fried egg, roasted sesame seeds, spring onions, and MORE grated parmesan (yes, the more the better XD)

INGREDIENTS

Udon

  • 400g udon noodles

  • 1/2 cup sliced short cut bacon

  • 1 1/2 chopped kimchi

  • 1 onion, diced

  • 1 stalk spring onion, chopped

  • 1 egg

  • cooking oil

Sauce Mixture

  • 1/2 Korean chili powder

  • 1 tbsp Gochujang Korean chili paste

  • 1/2 chili flakes

  • 3 clove garlic, minced

  • 1 stalk spring onion, chopped

  • 1 tbsp soy sauce

  • 1 tbsp honey

  • 1/2 tsp sugar

  • 1/2 cup milk

  • 2 tbsp sesame oil

  • grated parmesan cheese

Garnish (optional)

  • Sunny side up egg

  • Chopped spring onion

  • Roasted sesame seeds

  • Grated Parmesan cheese
